Stewed Potatoes

8 medium potatoes
1 stalk celery, chopped
1 small onion, chopped
1 can chicken broth or homemade broth
2 chicken bouillon cubes

Peel and dice potatoes.
Put potatoes in pot with bouillon cubes and broth. Set aside.
Saute onion and celery in saucepan with 1/2 stick margarine.
Cook until tender.
Add to potatoes.
Season with salt and pepper.
Add water to just cover potatoes; cover and simmer until thickened and potatoes are tender.
