Applebee's Perfect Margarita

1 1/2 oz. Cuervo or 1800 gold tequila
3/4 oz. Cointreau
3/4 oz. Grand Marnier
1/2 oz. lime juice
2 oz. sour mix

Chill glass well. Mix all ingredients and pour into chilled glass. (Mix in a drink mixer with lots of ice. Strain margarita into a salt rimmed martini glass. Serve with a lime wedge and stuffed green olive.)

Buchtel

2 packages yeast
1/2 cup warm water
1 cup warm milk
1 stick margarine
1/2 cup sugar
1 teaspoon salt
2 eggs, slightly beaten
1 teaspoon vanilla
5 cups flour
1/2 cup melted butter
Jelly, any flavor you like
powdered sugar

Mix together the water and milk. Dissolve the yeast in the water/milk mixture.
Cream together the margarine, sugar, salt, eggs and vanilla. Add to the yeast mixture.
Stir in the flour. Beat with a wooden spoon until smooth. Put in a greased bowl. Cover and set in a warm spot until doubled, about 2 hours. Put the 1/2 cup melted butter in the bottom of a 9 x 13" pan. Drop large spoonfuls of the dough into the pan with the butter. Make a hole in the center of each mound of dough. Fill the hole with a teaspoon of jelly. Close the hole, seal, and turn upside down. Bake in a 325 degree oven for about 45 minutes or until golden brown. Dust with powdered sugar.

Ugly Duckling Cake

1 box yellow cake mix (I like Duncan Hines)
2 eggs
1/2 C oil
1 1/2 C water
1 1/2 t each vanilla, lemon and orange extracts
1 box lemon pudding (non-instant)
1/2 stick butter
1/4 C orange juice
1/8 C milk
1/2 t each, vanilla, orange and lemon extracts
1 t orange zest or dried peel
powdered sugar

Mix cake mix, eggs, oil, water, 1 t of each extract and pudding mix together, beating well. Bake in greased 9 x 12 pan at 350 until tests done. When cake is done, boil together butter, orange juice and milk. Whisk in 1/2 t of each extract, zest and enough powdered sugar to make a glaze. Pour glaze over warm cake. Cool slightly before serving.

Auntie's "Japanese" Fruit Cake

1 C butter
4 3/4 C sugar
3 1/4 C + 4 T flour
1 1/4 C milk
6 eggs
2 t baking powder
2 t cinnamon
1 t ground cloves
1 t nutmeg
1 box golden raisins
1 cup nuts, chopped
2 seedless oranges, peeled and chopped
2 lemons, peeled and chopped
1 C crushed pineapple, drained
1 C grated coconut

Cream butter and 1 3/4 C sugar. Add eggs and beat well. Sift 3 1/4 C flour, spices and baking powder together. Add to egg mixture alternately with milk. Beat well. Fold in raisins and nuts. Bake in 4 (9-inch) layers. While cake cools, make filling. Mix 3 C sugar, 4 T flour, oranges, lemons and pineapple in saucepan. Cook over medium heat, stirring often until thick like honey. Cool and add coconut. Spead between layers of cake and on top and sides.

Redeemer Communion Bread

1 C all-bran cereal
3/4 C sugar
3/4 C shortening
1 T salt
2 C boiling water
2 pckgs. yeast
1/2 C warm water
2 eggs
6-9 C flour

Pour boiling water over cereal, sugar , shortening and salt to dissolve. Cool to lukewarm. While it is cooling, dissolve yeast in warm water. When cereal mixture is cool, add yeast, eggs and flour. Stir together, no kneading is necessary. Let bread rise until double. Shape into loaves or rolls, let rise again and bake at 350 until done.

Grandmomma's Fluffy Dumplings

1 1/2 C flour
2/3 t salt
4 t baking powder
1 egg
1 T oil
2/3 C milk

Mix all well. Drop by teaspoons into boiling broth. Cover and cook gently for 8-10 minutes or till done.

Patti's Green Rice

1 lb. ground beef
2 cups rice
1 can B&B mushrooms
1 pckg. frozen broccoli
8 oz. jar cheese whiz

Brown meat in skillet. Cook rice and broccoli separately. Combine all ingredients and bake in casserole at 375 for 15 minutes.

Nanaimo Bars

1/2 cup butter
1/4 cup sugar
5 tablespoons cocoa
1 egg -- beaten
1 3/4 cups graham cracker crumbs
3/4 cup coconut
1/2 cup walnuts -- finely chopped

1/2 cup butter
3 tablespoons milk
2 tablespoons vanilla custard
2 cups icing sugar

2/3 cup semisweet chocolate chips
2 tablespoons butter

Bottom layer,
Melt first 3 ingrediants in a heavy saucepan. Add beaten egg and stir to cook and thicken. Remove from heat, stir in crumbs, coconut and nuts. Press firmly into 9x9 ungreased pan.
Second Layer,
Cream butter, milk, custard powder and icing sugar together well. Beat until light. Spread over bottom layer.
Third Layer,
Melt chips and butter over low heat. Cool a bit and spread over second layer. Chill in refrigerator. Use a sharp knife to cut. 36 squares

Cookie Bowls

1/2 cup egg whites
1/2 cup powdered sugar
1/3 cup sifted flour
3 Tbsp. butter, melted and cooled
3/4 tap. vanilla extract

Beat egg whites until frothy; gradually add powdered sugar, beating well
after each addition; beat until stiff peaks are formed.
Fold in flour in halves. Blend in cooled butter and vanilla.
Quickly grease a preheated cookie sheet and bake a trial cookie - if it
is too brittle to shape, the batter needs a little more flour; if it is
thick and difficult to shape, add a little more cooled butter.
Drop mixture by heaping tablespoons 6 to 8 inches apart onto hot cookie
sheet (2 to 4 on a sheet, depending on the size of the sheet); spread very
thinly, being careful not to make holes.
Bake at 400 F for 2 to 3 minutes or until edges are lightly browned.
Immediately remove from cookie sheet and quickly shape inside a bowl. Let
cool. Store in tightly covered container.

Pecan Praline Syrup

2 cups dark corn syrup
1/3 cup dark brown sugar
1/2 cup water
1 cup chopped pecans
1/2 tsp. vanilla

Combine syrup,sugar, and water in a saucepot.Bring to a boil,boil for 1 minute. Reduce heat, stir in pecans and vanilla, simmer 5 minutes. Ladle hot syrup into hot jars, leave 1/4 inch headspace. Adjust 2 piece lids, water bath for 10 minutes. Yield about 4 half pints.

Kahlua

4 1/2 cup sugar
1 1/4 cup water
2 1/2 cup Yuban coffee (only this brand)
2 1/2 cup whole grain (190 proof) Everclear
1 tsp vanilla

Cook sugar and water until it forms a soft ball. Add 2 1/2 cups strong coffee.
Cool. Add alcohol and vanilla. Mix. Pour into bottles; cork. Let stand 2 weeks before serving.

*Note: Pour into small bottles and tie with a ribbon. Makes a great gift for house
warmings and at Christmas.

Hobo Cookies

6 eggs
2 cup white sugar
2 cup brown sugar
1/2 tbsp white syrup
1/2 tsp vanilla
1 bag M&Ms
4 tsp soda
1 cup margarine
3 cup peanut butter
9 cup oatmeal
1 (12oz) bag chocolate chips
1 bag Reese's peanut butter chips

Mix in order given. Drop by ice cream scoop on cookie sheet. Bake at 350* for 12 minutes.
Let stay on cookie sheet for a few minutes after baking. Makes 10 dozen cookies.

Beef in Potato Shells

3 lg baking potatoes
1 tbsp margarine
1 lb ground beef
1 can whole tomatoes, undrained
1 env taco seasoning mix
1/2 cup shredded cheddar cheese
1/2 cup sour cream

Bake potatoes as normal. Heat oven to 475*. Cut each potato lengthwise into halves.
Scoop out potatoes, leaving a 1/4-inch shell. Brush outside and inside of shells with melted butter. Place shells on ungreased cookie sheet. Bake uncovered until edges are brown, 15 to 20 minutes. Brown ground beef in 10-inch skillet. Stir in tomatoes and seasoning mix. Break up tomatoes, simmer uncovered 20 minutes, stirring occasionally. Spoon mixture into shells and sprinkle with cheese. Heat until cheese is melted. Top each with dollop of sour cream.

Chocolate Butterscotch Clusters

1 cup semi sweet chocolate chips
1 cup butterscotch flavored chips
2 tbsp creamy peanut butter
4 cups rice crispies

Line a baking sheet with waxed paper. In a double boiler, melt together the chocolate chips, butterscotch chips, and peanut butter. Add the rice crispies and stir until well coated. Drop by teaspoonfuls onto the waxed paper and cool until firm.

Blood Sausage Candy

1 pound of milk chocolate
1 square of unsweetened chocolate
1 egg
1 teaspoon of vanilla
1 cup of chopped nuts, any kind will do
1 pound of powdered sugar, approximately

In double boiler melt chocolates together. In a little bowl beat the egg and than add to melted chocolates.
Add the teaspoon of vanilla, nuts, and powdered sugar. Mix in enough powdered sugar to make a soft, but not sticky dough. Hands work best in mixing in the powdered sugar.
Roll into logs, about an inch around. Place on wax paper on cookie sheets and refrigerate untill firm. Slice into thin slices. Freezes very well.
Makes a generous 2 pounds.

Sweet Potato Pudding

2 ½ pounds sweet potatoes, boiled, drained and peeled
6 tablespoons unsalted butter or margarine, at room temperature
2 large eggs
¼ cup heavy cream
1 tablespoon brandy (optional)
½ teaspoon freshly grated lemon peel
¼ teaspoon each salt and pepper

Heat oven to 375 degrees. Grease a shallow 1 ½ quart baking dish. Break up potatoes and puree in a food processor or mash by hand with 5 tablespoons of the butter. Add eggs and remaining ingredients except 1 tablespoon butter; mix until well-blended. Spread evenly in baking dish; dot with remaining butter. Bake uncovered 30 to 35 minutes until top is lightly browned and puffed.

Apple-Onion Stuffing

1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup bacon drippings or butter
2 cups diced tart apples
2 tbsp granulated sugar
2 cups coarse bread crumbs
1/4 tsp each...cinnamon,nutmeg,sage and thyme
2 tbsp finely chopped parsley
2 tbsp finely chopped chives (optional)

In large saucepan, cook onion and celery until softened. Add apples and sugar.Cook,stirring,over low heat about 5 minutes. Add crumbs(you may need more than 2 cups to hold dressing together) and remaining ingredients; taste and adjust seasoning.

Taffy Apples

2 cup White sugar
2 cup Light corn syrup
1/3 cup Cinnamon candies (hearts)
1 cup Cold water
1/2 tbs Red food coloring
1/2 tbs Cinnamon
6 Red apples McIntosh or Delicious
6 Popcycle Sticks

In heavy saucepan, combine sugar, corn syrup and cinnamon candies with 1-cup cold water. Cook over medium heat until sugar and candies are dissolved, but do not boil. Add the food coloring and the cinnamon and bring up to boil. Boil until it reaches 300 F on a candy thermometer. Meanwhile, wash and dry apples, remove stem and insert wooden sticks firmly enough into the apple that you can hold them firmly. Remove syrup from heat when it reaches 300 and dip each apple into syrup. Swirl to coat apple. Place coated apples onto greased cookie sheets to cool and harden. Let stand at room temperature until ready to serve. Make 6 taffy apples.

Jelly Roll

3 Eggs
1 Cup Sugar
1 tsp baking Powder
3 TB Milk
1 Cup Flour

Mix all ingredients together and spread batter into well greased and floured cookie sheet.
Bake 10 Minutes at 350 degrees, immediately cooling on towel or rack. Spread with jelly and roll up
Cut roll into 1 inch strips and serve.

Banana Split Cake

2 cups graham cracker crumbs
1 stick butter (melted)
1 stick butter (softened)
2 cups powdered sugar
1 tsp. vanilla
2 eggs
6 bananas
1 large can crushed pineapple (drained)
1 large container of Cool Whip
1/2 cup chopped nuts (your choice)
1 small jar of dessert cherries

Mix the crumbs and the melted butter then press evenly to the bottom of a 9 X 13 X 2 glass dish or pan. Beat the sugar, vanilla, and softened butter together for 10 mins. Add the eggs one at a time, beating well after each. Spread this mixture over the crumb layer. Peel the bananas and slice in half lengthwise then place onto the creamed layer. Spoon the drained pineapple over the bananas. Cover with Cool Whip and sprinkle with the nuts. Chill at least 4 hours before cutting into 2 inch squares. Garnish each serving with a cherry.
