Bailey's Irish Cream

1 3/4 C. Irish whiskey,
1 tsp. instant coffee
1 (14 oz.) can condensed milk
1 C. whipping or light cream
2 T. chocolate-flavored syrup
4 eggs
1 tsp. vanilla extract
1/2 tsp. almond extract

In blender container combine all ingredients and blend until smooth. Serve over ice, if desired. Store in a tightly covered container in refrigerator where it can be stored up to one month. Stir before serving. Makes 5 cups.

Auntie's "Japanese" Fruit Cake

1 C butter
4 3/4 C sugar
3 1/4 C + 4 T flour
1 1/4 C milk
6 eggs
2 t baking powder
2 t cinnamon
1 t ground cloves
1 t nutmeg
1 box golden raisins
1 cup nuts, chopped
2 seedless oranges, peeled and chopped
2 lemons, peeled and chopped
1 C crushed pineapple, drained
1 C grated coconut

Cream butter and 1 3/4 C sugar. Add eggs and beat well. Sift 3 1/4 C flour, spices and baking powder together. Add to egg mixture alternately with milk. Beat well. Fold in raisins and nuts. Bake in 4 (9-inch) layers. While cake cools, make filling. Mix 3 C sugar, 4 T flour, oranges, lemons and pineapple in saucepan. Cook over medium heat, stirring often until thick like honey. Cool and add coconut. Spead between layers of cake and on top and sides.

Momma's Bean Salad

3 cans beans (black, pinto, kidney, etc.) drained and rinsed
3 stalks celery, finely chopped
1/4 medium onion, finely chopped
1 can sliced waterchestnuts (optional)
1/2 cup pecans, chopped
mayonaise
salt and pepper

Mix vegetables and pecans. Add enough mayonaise to moisten and salt and pepper to taste. Chill 2 - 3 hours.

Chocolate Cinnamon Rolls

1 C milk, scalded
1 C water, cold
1 T sugar
2 pckgs. yeast
1/2 C cocoa
6 T shortening
1 t butter flavoring
1/2 C sugar
3 eggs
7 C flour

Filling Ingredients

1 C sugar
1 C brown sugar
1/4 C cocoa
1 C pecans, finely chopped
2 T cinnamon
1 stick butter, melted

Icing Ingredients

2 C powdered sugar
3 T cocoa
1 t vanilla
enough milk to make thin glaze

Mix milk, water, 1 T sugar and yeast. Set aside til foamy. Cream shortening, butter flavoring, cocoa and 1/2 C sugar. Add eggs and beat well. Stir in yeast mixture, alternating with 4 cups flour. Add remaining flour til you have a soft dough. Knead with dough hook or by hand til smooth. Let rise til doubled. Divide in half. Roll each half into a large rectangle. Mix together all filling ingredients except butter. Spread each dough half with melted butter and sprinkle with half of filling. Roll up into long rolls. Slice each roll into 12 pieces. Place in pans and let rise again til rolls are very large and fill the pan. Bake at 375 until light brown. Drizzle with icing while warm.

Patti's Green Rice

1 lb. ground beef
2 cups rice
1 can B&B mushrooms
1 pckg. frozen broccoli
8 oz. jar cheese whiz

Brown meat in skillet. Cook rice and broccoli separately. Combine all ingredients and bake in casserole at 375 for 15 minutes.

Beef Tamale Pie

1 1/2 lbs. ground beef
2 T chopped garlic
1 can tomato sauce
2 t salt
1/4 t pepper
1 onion, chopped
1 can diced tomatoes
1 can corn, drained
1 T chili powder
1 t ground cumin
1/2 t dried oregano
1 C cornmeal
1 C water
1 1/2 C milk
1 cup cheese, grated
2 T butter
2 eggs, beaten

Brown beef in skillet with onion and garlic til vegies are soft. Stir in tomatoes, tomato sauce, corn, chili powder, cumin, oregano, 1 t salt and pepper. Simmer 5 minutes. Mix 1/2 C cornmeal and water. Stir into skillet and simmer 10 more minutes. Keep warm. Prepare topping. Heat milk, 1 t salt and butter in saucepan. Whisk in 1/2 C cornmeal and cook until thickened, stirring constantly. Remove from heat and stir in cheese. Add eggs and blend. Pour meat sauce into casserole dish. Spoon topping around edge. Bake at 375 for 20 minutes or until topping is golden and sauce is bubbly.

Pretzel Salad

CRUST

2 cups crushed pretzels
3/4 cup melted butter
3 tsp sugar

FILLING

1 (8 oz) cream cheese
1 cup sugar
1 medium size Cool Whip

TOPPING

1 (6 oz) box strawberry Jello
2 (10 oz) frozen strawberries
2 cups boiling water

Mix crushed pretzels, sugar, and melted butter.
Press into a 9 x 13 glass dish. Bake at 400 degrees F
for 8 minutes. Cool completely.

Mix together cream cheese and sugar until smooth.
Fold in Cool Whip. Spread on top of cooled pretzel
crust.

Dissolve Jello in boiling water, add frozen strawberries
(water will melt them) Let stand for 10 minutes.
Pour mixture onto cream cheese layer. Refrigerate for 2 hours.

Bordelaise Sauce

2 T butter
1 shallot, minced
1 clove garlic, minced
1 slice onion
2 slices carrot
1 sprig parsley
6 peppercorns
1 clove
1 bayleaf
2 T flour
1 C beef bouillon
1/4 tsp salt
1/8 tsp pepper
1/3 C burgundy or other hearty red wine
1 T chopped parsley

Saute ingredients 2 through 9 in the butter until the onion is
golden. Remove from heat, add the flour and stir until smooth.
Return to low heat, stirring constantly, until flour is lightly
browned. Remove from heat, stir in the bouillon. Over medium
heat, bring to boil, stirring constantly. Reduce heat, simmer
10 min, stir occasionally.

Strain sauce, discarding vegetables and herbs. Add salt, pepper,
burgundy, chopped parsley. Reheat slowly over low heat prior to
serving.

Dirt Pie

1 cup cold milk
1 pkg (4 oz. serving) Chocolate flavor Instant Pudding
1 (8 oz) container Cool Whip
20 chocolate sandwich cookies, crushed
1-1/2 cups "rocks"*
1 graham cracker pie crust

* Rocks = Granola chunks, chocolate chips, peanut butter chips,
chopped peanuts, or any combination thereof

Pour milk into medium bowl. Add pudding mix. Beat with wire whisk until
well blended. Let stand 5 mins. Fold in whipped topping. Stir 1 cup of
the cookies and "rocks" into pudding mix. Spoon into pie crust. sprinkle
with remaining cookies. Freeze until firm, about 4 hours.

Orange Freeze Pie

1 deep dish pie shell, baked
1 pkg (3 oz) orange flavored gelatin
2/3 cup boiling orange juice (OJ)
1 cup vanilla ice cream softened
1 can (11 oz) mandarin oranges, drained
1 cup La Creme Whipped Topping, thawed

Dissolve gelatin in boiling OJ. Add ice cream by spoonfuls,
blending until dissolved. Chill until _slightly_ thickened.
Stir in mandarin oranges. Fold in whipped topping. Pour
into pie shell. Freeze until firm, about 2 hours. Remove
from freezer 15 minutes before serving.

Berried Avocado Grapefruit Salad

Bibb lettuce
Watercress
2 avocados, seeded, peeled and sliced
2 cups grapefruit sections
1 cup fresh raspberries
Prepared sweet vinegar and oil dressing

Line serving platter or individual salad plates with lettuce and
watercress. Arrange avocado, grapefruit and raspberries over
and sprinkle with dressing.

Oh Henry Bars

4 cups oatmeal
1/2 cup sugar
2/3 cup melted buttter
1 teaspoon vanilla
1 cup brown sugar
FROSTING
1 cup chocolate chips
2/3 cup peanut butter

Mix oatmeal, sugar, butter, vanilla and brown sugar. Pat into a 9x13 in pan and bake at 350 degrees for 20 minutes. Frost while still warm with chocolate chips and peanut butter melted together in microwave.

Black Forest Cheesecake

Crust
1 cup chocolate wafer crumbs
3 tablespoons margarine -- melted
Filling
2 packages cream cheese -- (8 ounce) softened
2/3 cup sugar
2 eggs
1 package semi sweet chocolate pieces -- (6 ounce) melted
1/4 teaspoon almond extract
Topping
1 can cherry pie filling -- (21 ounce)
Frozen whipped topping thawed

Combine crumbs and margarine; press onto bottom of 9 inch springform pan. Bake at 350degrees F for 10 minutes.
Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate and extract; pour over crust. Bake at 350 degrees F for 45 minutes.
Loosen cake from rim of pan; cool before removing rim of pan. Chill cheesecake. Top cheesecake with pie filling and whipped topping just before serving.

Carmelita Squares

1 cup flour
1 cup quick oats
3/4 cup brown sugar -- firmly packed
1/2 teaspoon soda
3/4 cup melted butter or margarine
1/8 teaspoon salt

Topping
1 small chocolate chips -- 6 ounce
1/2 cup walnuts -- chopped
3/4 cup carmel ice-cream topping
3 tablespoons flour

Combine first six ingredients, and press 1/2 to 3/4 of the mix into a greased 9 X 13 pan. Bake at 350 for 10 minutes.
Sprinkle chocolate chips and nuts over top of crust evenly. In a small mixing bowl mix 3/4 cup of carmel ice cream topping with the 3 tablespoons of flour until smooth. Pour over top of chocolate chips and nuts, then sprinkle with the remaining crumbs from crust mix.
Place back in the oven for another 15 to 20 minutes . Cool and cut into squares.

Unbaked Chocolate Squares

1/2 cup butter
1/2 cup sugar
3/4 cup walnuts
2 tablespoons cocoa
1 egg -- beaten
1/2 box graham crackers -- broken up into small pieces
1 teaspoon vanilla

Melt butter, add sugar, cocoa and egg. Bring to a boil, simmer for 1 minute. Add vanilla, nuts and wafers. Mix well and press into a well greased 8 x 8 pan.
Cool and frost with chocolate icing, sprinkle a handfull of chopped walnuts over top. Slice into squares.

Walnut Loaf

2 cups flour
2 tsp baking powder
1/2 cup sugar
1/2 cup walnuts chopped
pinch salt
1 egg beaten
1 Tbs golden syrup warmed
1 cup milk

Sift flour and baking powder, add sugar and nuts. Make a well in centre
and add beaten egg, milk and warmed golden syrup.
Bake in loaf tin 1 hr. at 400 degs. F.

Cookie Bowls

1/2 cup egg whites
1/2 cup powdered sugar
1/3 cup sifted flour
3 Tbsp. butter, melted and cooled
3/4 tap. vanilla extract

Beat egg whites until frothy; gradually add powdered sugar, beating well
after each addition; beat until stiff peaks are formed.
Fold in flour in halves. Blend in cooled butter and vanilla.
Quickly grease a preheated cookie sheet and bake a trial cookie - if it
is too brittle to shape, the batter needs a little more flour; if it is
thick and difficult to shape, add a little more cooled butter.
Drop mixture by heaping tablespoons 6 to 8 inches apart onto hot cookie
sheet (2 to 4 on a sheet, depending on the size of the sheet); spread very
thinly, being careful not to make holes.
Bake at 400 F for 2 to 3 minutes or until edges are lightly browned.
Immediately remove from cookie sheet and quickly shape inside a bowl. Let
cool. Store in tightly covered container.

Blueberry Sherbet

Sorbet aux Myrtilles(Blueberry Sherbet)

2 pints fresh blueberries, picked over but not washed (800 g.)
2 1/2 cups sugar(500 g.)
juice of 2 lemons
1 1/4 cups cold water (3 dl.)

Puree berries with sugar, lemon juice, and water. Pour into ice cream
maker and freeze according to instructions--until smooth and frozen. To
preserve the fruit flavor, serve the same day.

Kahlua Banana Brunch Cake

1 cup butter, softened
1-1/2 cups granulated sugar
3-1/2 cups sifted all-purpose flour
1 cup mashed ripe bananas (about 2 medium)
1/2 cup Kahlua
4 large eggs
1/4 cup milk
1 Tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
3/4 cup flaked coconut
3/4 cup chopped walnuts
Optional: sifted powdered sugar

Grease 10 in. tube pan well. Preheat oven to 350 F. Cream butter and
sugar until fluffy. Beat in flour, 1/2 cup at a time, with remaining
ingredients except coconut and nuts. Beat on low speed until mixture
is well blended. On medium speed, beat 2 min., scraping bowl as you
beat. Stir in coconut and nuts. Turn into prepared pan. Bake 45
to 50 min., or until golden brown. Remove from oven; let stand 10
min. Invert on cake rack; remove pan. When fully cooled, dust with
powdered sugar, if desired.

Serves 10-12.

Mushroom Pate

3/4 pound chopped mushrooms
2 tbsp butter
8 oz cream cheese
1/2 tsp curry powder
1 tsp worcestershire sauce
1 tbsp dry sherry (or dry white wine)
1/2 Cup pecans, chopped

Saute the mushrooms in butter until dark (about 5min or so) and drain.
Process or puree with the cream cheese, curry, worcestershire sauce, and
sherry. Fold in the pecans and refrigerate. Garnish with parsley or
watercress.
