Pumpkin Butter

2 cups pumpkin

2/3 cup brown sugar

3/4 cup apple cider

1 teaspoon pumpkin pie spice

Boil for 10-15 minutes or until it starts to thicken. Pour into container and cool. Refrigerate. Will keep for up to three weeks. Serve on toast, bagels, muffins. Makes 3 cups
