Polenta

1 cup corn meal
1 cup cold water
3 cups hot water
1/4 tsp. salt
2 cups tomato sauce, or to taste
grated cheese-parmesan or romano

In pan, mix corn meal, 1 cup cold water. Add 3 cups hot water and salt. Cook over medium heat 8 minutes, stirring constantly. Place in large dish, cover with tomato sauce and sprinkle with grated cheese.
